SMOKEHOUSE MEATS

All meat is prepared with care and skill to impart the right amount of smoke and ensure it's cooked to perfection, we use local ironbark timber in our custom made smokehouse.

 

BEEF BRISKET

Local grass-fed beef with a simple texas style salty & pepper rub, smoked for up to 10 hours till its buttery and flowing with beefy magnificence.

An absolute show stopper.

PULLED PORK

 Bangalow pork rubbed with a tangy mustard spice rub and smoked for up to 10 hours and braised in white wine and Alabama sauce till it falls apart.

An adaptable full-flavoured pork sensation.

CHICKEN

Slow smoked succulent free-range chickens rubbed with a secret spice rub, stuffed with seasonal veggies and smoked for 5 hours till moist and juicy.

Cut into large pieces for the world to enjoy.

LAMB

Shoulder of lamb rubbed with rosemary salt & pepper smoked for 8 hrs till its fall off the bone. 

The natural sweetness of the meat balances with ironbark smoke to perfection.

 Ooh so tasty.

Smoked Stuffed Mushrooms (vegan)

Large swiss brown mushrooms stuffed with cashews, herbs and basil pesto, 

Absolutely delicious, would keep the fussiest of food critics satisfied.
